Falafel (Chick Pea Patties)

Falafel

Falafel is a standard food in many Eastern Mediterranean countries and is high in protein and fiber. Since it's vegetarian, it can be useful to have on the table when you need to provide a meatless alternative for friends or family members. You don't have to be a vegetarian to enjoy it though. It's much like a meatless meatball and can be enjoyed either alone, with other Mediterranean side dishes, or else in a sandwich.

Split Pea Soup with Ham

This is the time of year for split pea soup! Many of us will have a ham at either Thanksgiving or Christmas. The ham bone (with the hunk of ham attached) makes a great base for split pea soup.

My husband is in love with ham. I think I could dab some ham juice behind my ears and he would like it. But he won't eat this soup even though he likes both peas and ham (go figure). But luckily one of my daughters and I enjoy it enough for the whole family. It makes a great lunch and freezes great too for future lunches.

Refried Beans

I made a HUGE pot of basic beans last weekend. Part of them I froze in jars whole, and the rest I made into refried beans and also froze in jars. I am now pretty much set for beans for about one year.

Beans without Side Effects?

Can you have beans without ummm… side effects? Yes, it is possible!  The key is in the proper soaking and rinsing of the beans prior to cooking.

These beans are the base of many recipes in Nourishing Traditions. I make these about once a year, make them into refried beans and also leave some whole, and freeze them in jars. The whole beans I use in minestrone soup, chicken tortilla soup or other vegetable soups. The refried beans we use on a weekly basis with tacos or as a side dish to enchiladas. The girls even use them for impromptu nachos when I don't feel like cooking for a night. Easy and inexpensive!

How to Sprout Lentils – Procrastinate!

“Mom!!” screamed Zoie.

“Yes?” Kim said, not alarmed at all because screaming is a normal occurence.

“There are worms all over the lentils! Arrrrrrgghhhrr!!”

Well of course I had to look. And lo and behold, every single one of the lentils in various bowls on my counter each had a little white tail. My lentils had sprouted. This was surprising to me because I was not attempting to sprout the lentils. I had just left soaked, drained and rinsed lentils on the counter all day. I guess sprouting is all about procrastination? I could get into this!

Teriyaki Lentil Stew

My girls LOVE teriyaki. Anything teriyaki flavored is high up in their book. I had never heard of teriyaki lentils but really wanted to make it work so that I'd have another type of lunch I could put in their thermos. So I made up this recipe just for the girls, and it worked! They love it! I put about 3/4 to 1 cup of this stew in their thermos with 3/4 cup of the soaked brown rice. The lentils are a bit strong to eat by themselves, so they go perfect with the rice.
