This potato recipe packs in creamy cheesey goodness and will absolutely torture you with its wonderful scent when it's cooking. When it comes out the oven, we have a very hard time letting it cool the appropriate ten minutes before we dig in.

A few weeks ago I had a girls' weekend in beautiful Whidbey Island, Washington. My friends and I rented a house with amazing views of the Puget Sound and had some great girl time. Part of this time included cooking because we didn't want to eat out and spend too much money. The first night, my friend Kathy made this fabulous savory tomato basil pie. She is pictured above with the final product. Paired with a salad of home grown veggies, it was a perfect end to a perfect end-of-summer bright and sunny day.

This is a guest post at TNC blog, written by my 14 year old daughter Allie. The cheese that she used in this recipe was from Rogue Creamery. She used their extra sharp (and extra creamy – yum) cheddar and combined it with their Crater Lake Blue Cheese. This is the most robust blue cheese that they offer, and it was amazing! – Kim

I have a confession to make…
I have a day job.
Yes, the Nourishing Cook has a cubical job. I actually work for a local computer chip company as a systems analyst. I admit it, I am a techie! Techie by day, foodie/blogger by night!

You know how there's some times that you just crave rich, deep tomato flavor? Well here's the way to get it quickly… in Pizza Soup (a.k.a. Pappa Pomodoro). It's an Italian tomato soup that your kids will love! You will love it too because it will fill them up and it's inexpensive to make.
This recipe is an original TNC recipe. Go here for all original TNC recipes.
