Minestrone – the Leftover Soup

Minestrone is Italian for ‘the big soup’, and it can be made with any leftovers you have. I used ingredients that I had on hand and in the freezer, very warming, quick and inexpensive! Does it get any better than that? Oh yeah, if my husband would eat it that would be better!
